UMF Honey refers to Manuka Honey from New Zealand. The acronym "UMF" stands for Unique Manuka Factor which refers to the antibacterial potency of the honey. All types of honey have some levels of antibacterial activity. However, Manuka Honey has been found to have the highest levels of healing properties, more so than any other honey. Manuka Honey is produced by bees that utilize the nectar of the flowers that grow on the Manuka Tea Tree, which is indigenous to New Zealand.
In New Zealand, a rating system exists to measure the antibacterial potency of Manuka Honey. The honey must be laboratory tested in order to measure these levels. It is generally accepted that Manuka Honey with a UMF rating of 10 or higher is considered to be active and suitable for therapeutic use. Manuka Honey UMF 0 through 9 may not be potent enough to yield the same results that most people have come to expect from Manuka Honey. However, it makes a nice sweetener and is usually less expensive than medical-grade Manuka Honey.
The higher the UMF rating, the higher the antibacterial potency. However, Manuka Honey with an extraordinarily high UMF rating is not desirable either. For example, Manuka Honey 20, 25 or 30 is very rare, ridiculously expensive and completely overkill. In fact, some people have reported sensitivity to Manuka Honey that is this potent in the form of a burning sensation. Therefore, it is recommended to use a medium grade honey for medicinal purposes (i.e. UMF 16+).
